When something airs weekly, you have time in between to think and speculate and focus on little details. By the time the end of the season is there, you're ready to write all the fic, because you've had the time to make it yours. This doesn't really happen when you binge-watch something, you loose the details of the worldbuilding.
This is a good point, and very true. I always prefer watching week to week to binging because of it; it's so much nicer to prolong your time in a show's world that way, but it's hard not to dive in when you're excited about something, too, lol.
